Funfetti Cupcakes

The best way to start out Easter weekend is by baking. It is a bit strange that Easter falls on March and not in April this year, but I'm going with the flow. I love that this recipe is so easy. Its all about combining ingredients without over mixing the batter and the results are really fluffy cupcakes which make the whole house smell great! 

You will need: 

1 1/2 cups of Flour
1 cup of sugar
1/2 cup of butter 
1 large egg
1/2 tsp baking power
1/4 tsp salt
1 cup of milk 
1 tsp vanilla extract 
1/4 sour cream
1/2 cup rainbow sprinkles

8 oz cream cheese 
6 Tbsp of butter
2/3 cup powdered sugar 
1 tsp vanilla extract 

 Begin by preheating the oven to 350° F. Then place twelve cupcake liners into a cupcake tray and set aside.  

In a bowl combine flour, baking powder and salt. Give it a quick mix and set it aside.

In a large bowl, mix room temperature butter and sugar together. Add an egg, vanilla extract and sour cream and mix. Measure one cup of milk then alternate between adding the dry ingredients and milk into the large bowl.  Combine the ingredients, but don't over mix otherwise the batter will be dry and thick. Measure 1/2 cup of  rainbow sprinkles and fold them into the batter with a spatula. When everything has been fully incorporated fill cupcake liners 3/4 of the way. Place cupcakes in the oven for 25-27 minutes.  When these cupcakes are just about done they start to smell incredible, but don't take a bite out of a hot cupcake leave them to cool down for a bit. As they are cooling down begin making the frosting. 

If you have a sweet tooth or if you love frosting take 8 oz of cream cheese and mix it together with 6 tbsp of butter. Make sure that both the cream cheese and butter are at room temperature and soft. Mix with an electric or hand held whisk. A hand whisk might take a bit longer, but it works just fine. Add vanilla extract after whisking it. When everything is nice and creamy, slowly add powdered sugar. 

 Insert frosting into a piping bag and begin to frost. Then enjoy your delicious cupcakes!
